EGG BRUNCH

1 med onion chopped

1 pound bacon fried crispy and crumbled

1 pound ham chopped or

1 pound breakfast sausage fried and crumbled

1/2 med bell pepper chopped

1/2 med red or yellow sweet pepper chopped

12 eggs

1/4 cup milk

1 cup shredded sharp cheese--I use a big hand full so its probably more than a cup

3 potatoes chopped

pepper to taste

In several teaspoons extra virgin olive oil and a pat of butter lightly saute potatoes til golden brown. Add chopped onion and peppers cooking until they just done but not brown. Add the meat of your choice. In another bowl whip eggs and milk together. Pour eggs in casserole dish and add slightly cooled meat mixture and the cheese. Mix together. Bake in 350 oven until the top is nicely browned and a knife comes out clean from the center.

This is a very versatile recipe so experiment with the vegetables and the meat. I sometimes add ground red pepper to give it a zing.
